Scalloped Mushrooms

Tender mushrooms layered with cream and cheese come together in this scalloped mushroom recipe. 1/2 cup butter

3 pounds fresh mushrooms, sliced

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon pepper

1/8 teaspoon cayenne pepper 

3 cups grated Gruyere or Swiss cheese

Chopped parsley for garnish

Preheat oven to 400 degrees. In a large skillet over medium heat, saute mushrooms in butter for 5 minutes. Add cream. Cook and stir until cream is almost absorbed. Mix in salt, pepper and cayenne pepper. Pour into a greased 2-quart shallow baking dish. Sprinkle with cheese. Bake 10 minutes or until cheese is lightly browned. Garnish with chopped parsley. Serves 12
